Өгүүллийн хураангуй: It is wide possibility under the meat production factory establish the production of finished products processed from Mongolian animal connective tissues /bone trachea/ for food and provide to foreign and domestic markets. During the determining of technological rules for jelly /mousse/ soup from dried and heat processed tubular and flat /compact/ bones of animals, it was clear that the content of biologically active substances are more high in compact bone stock than in tubular bone stock. The content of molecular mass of  stock was determined and protein groups were identified.
